The Atkins Diet is based on training the body to burn fat. This is done by limiting one’s intake of carbohydrates. For Atkins counting net carbs is the relevant metric, a figure equal to the total carbohydrates in a serving minus fiber. The program starts with a very restricted diet, but eventually expand to include more foods in limited quantities dieters reach their target weights

The first two weeks of the Atkins Diet is called “induction phase.” It’s designed to get your body accustomed to a low-carb environment, increases the natural metabolism of fat leading to weight loss. During this period, total net carbs per day is limited to 20. During this period, the acceptable foods include lean proteins such as chicken, fish, turkey, veal, eggs and lean meat cuts, which can be eaten in unlimited quantity . Other permitted foods during induction include leafy greens and low-starch vegetables (essentially everything except legumes), but these must be limited to be below 20 carb limit.

After the very strict induction phase, expanding the allowable food list to include higher carb foods such as nuts, seeds and berries. The daily carb allowance is reset with 25 and increases each week by 5 carbs per day until weight loss stalls or you come within 10 pounds of your goal weight. All the vegetables allowed in the induction phase is still allowed, but in slightly larger quantities.
Maintenance
When you get within 10 pounds of weight loss goal, it swells acceptable food list again. Starchy vegetables and cereals are included. You can add 10 net carbs per day per week until you reach your equilibrium carb intake, where you stop losing weight. A quarter cup of rice or half a cup of oatmeal equals about 10 net carbs. Squash, potatoes and beans allowed in limited quantity.
